Butternut Soup | General

Butternut Soup:

 

The cold weather is upon us, and there is nothing like a delicious bowl of soup to warm you up. This butternut soup is creamy, slightly spicy, and delicious. If you are hosting this could easily be served as an appetiser with a side of warm bread – and will have your guests asking for more.

 

 

 

Ingredients:

 

 

·       1 ½ kg. butternut squash, cubed

·       2 large brown onions, finely chopped

·       3 small garlic cloves, finely chopped

·       500 ml. chicken stock

·       1 tsp. lemon juice

·       2 small strong, green chillies, finely chopped

·       1 tbsp. butter

·      250 ml. fresh pouring cream  

 

Directions:

 

1.     Melt butter in a pot. Add the onions, garlic and chillies into the melted butter on a medium heat. Cook until onions are soft.

2.     Add the lemon juice and chicken stock and stir until well-mixed.  Add the water and cubes of butternut, and simmer for about an hour until the soup is thick and all the ingredients are well blended together, occasionally stirring.   

3.     Place into a blender, and blend until smooth.

4.     Serve with a tbsp. of fresh cream in the centre of the bowl and a side of warm bread.
